My brother and sister-in-law run an apiary back home in Virginia (AgBee Honey), and I was super excited to open a package this week and find a jar of their first honey crop (honey crop – is that the correct term?). I couldn’t wait to come up with a budget-friendly meal that featured that sweet natural goodness. After some thought, here’s what I came up with…husband tested and Beauty and a Budget approved.
Note: To make this even more economical, I always buy meat that’s on sale (not yet expired) and freeze it immediately. The pork chops I used in this recipe were $3 for 4 chops! I used them for two different meals – so that’s quite a bargain. I’ve found that meat is normally marked down around/after 6pm and Thursdays seem to be a good day to pay a visit to the store to take advantage of the savings.
Honey Glazed Pork Tacos (makes 4-5 tacos / 2 servings)
1tbsp AgBee Honey
2tbsp olive oil
2tsp lemon juice
2tsp soy sauce
dash of red pepper flakes
2 pork chops
Soft corn tortillas
Mozzarella cheese, freshly shredded
Mild Herdez salsa (the best brand I’ve found for the price)
Mix first 5 ingredients in a bowl. Slice pork chops in long, thin strips and marinate in the honey mixture for 20-25 minutes.
Pour a small amount of canola or olive oil in a large skillet and place corn tortillas in the pan. Heat on medium for about 2 minutes each side or until soft and pliable, slightly browned. Place corn tortillas in aluminum foil to keep warm.
Pour pork strips and liquid mixture into the skillet. Cook on medium for about 4 minutes each side, or until cooked through. Remove from skillet.
Place tortillas on plates, top with half of shredded cheese. Top with pork strips, salsa, and remaining shredded cheese.Share on Facebook
