I recently mentioned my Valentine’s Day dinner and have since then gotten requests for the recipe. I know its hard to believe that you can make this wonderful meal for around $4 a serving…..but in true Beauty and a Budget style here it is:
Filet Mignon with a Balsamic & Red Wine Reduction Sauce
2 cuts of bacon-wrapped filet mignon (your local discount grocer should have these pre-packaged in the meat section for around $5 for 2)
Balsamic vinegar (a great staple to keep around the house for other recipes and quick dressings)
Dry red wine (buy them in the mini bottles and store in the pantry for other recipes)
Your favorite veggies (I steamed broccoli with kosher salt and roasted potatoes with olive oil, salt, and rosemary)
First, take the filet mignon cuts out of the package and secure the bacon around them with a toothpick. Mix 1/4 cup balsamic vinegar with 1/4 cup red wine. Place filets on the grill over medium heat (or in a pan if cooking on the stove) and baste with the sauce mixture. Cook for about 7 minutes on one side, flip, baste, and cook the other side for about 7 minutes as well. While filets are cooking, pour rest of sauce mixture into a sauce pan and bring to a boil for about 3 minutes (swirling occasionally) or until sauce reduces to a couple tablespoons. Dribble reduction sauce on a plate, placing filet on top of the mixture. Complete the meal with your favorite veggies.
